Ingredients

2 1-inch thick ribeye steaks

1 tbsp of olive oil

Osmo’s Vidalia Seas Salt and pepper to taste

Dry Steak Rub Seasoning TT

2 white onions, sliced

2 tablespoons of Osmo’s Extra Virgin Olive Oil

4 sprigs of thyme
-
2 tbsp Basil Pesto
-
1 tb Horseradish
-
¼ cup Mayonnaise
-
2 ounces of Arugula
-
2 French rolls, toasted
Directions
In a large non-stick pan, add the olive oil, sliced white onions, thyme and salt and pepper to taste. Sautee on low for 45 minutes-1 hour, stirring often. If onions begin to get too dark or dry, add a few tablespoons of water to the pan. When the onions turn a deep golden color, remove from heat.
Mix together the mayonnaise and horseradish in a small bowl. Set aside until assembly.
Bring the ribeye steaks to room temperature.
Season both sides of the steaks with salt, pepper and steak seasoning rub to taste.
Preheat a large cast-iron pan for 4-5 minutes on medium-high heat.
When the pan gets hot, add the olive oil and both steaks.
Sear for 4-5 minutes, flip and sear for another 2-3 minutes on the other side.
Remove from the pan, and let rest for 10 minutes before slicing.
Assemble the sandwich; add the pesto, a few arugula leaves, sliced steak, horseradish aioli and caramelized onions to the toasted french and serve.
