Ingredients

1 lb chicken breasts, boneless and skinless

2 chipotle peppers in adobo sauce, minced

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon paprika

1 cup of cooked rice

2 tablespoon of pickled onions

1 avocado, sliced, for garnish

Fresh cilantro, chopped, for garnish

Optional: tomatoes, black beans, corn kernels, shredded cheese, sour cream
Directions
In a bowl, combine minced chipotle peppers, garlic, olive oil, lime juice, cumin, paprika, salt, and pepper.
Add chicken breasts to the marinade and coat well. Let it marinate for at least 15 minutes (or longer for more flavor).
Heat a grill pan or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side, or until fully cooked through Remove from heat and let it rest for a few minutes before slicing.
Divide the cooked rice among serving bowls.
Top each bowl with slices of chipotle chicken, sliced avocado, a spoonful of pickled onions, and any additional toppings you desire (such as tomatoes black beans, corn, shredded cheese, or sour cream).
Garnish with chopped cilantro and a lime wedge.
